Yemini Salta |
This delicious Yemini delicacy is just what you need to add some flavor to your family gatherings!
Preparation Time: 20 minutes approximately
Cooking Time: 30 minutes approximately
Serves: 7 persons
All you need
1/2 cup water
2 tbsps ground fenugreek
2 tbsps vegetable oil
11/2 cups chopped spring onions
2 cubes al alali Chicken Stock
2 tbsps rice, washed
1 tsp ground cumin
2 medium tomatoes, peeled and chopped
2 medium potatoes, cut into medium cubes
4 cups water, additional quantity
For the green sahawek:
2 pinch al alali Garlic Powder
1/4 cup chopped coriander leaves
1 chopped green chili
1/4 cup leeks, leaves only
1/4 cup water
Pinch of salt
Directions
- In a bowl, add 1/2 cup water, add fenugreek. Set aside for 2-3 hours, drain the water. Set aside
- In a large saucepan, heat oil and sauté chopped spring onions for around 2 minutes. Add potato, tomatoes, al alali Chicken Stock, cumin, al alali Garlic Powder, rice, and the remaining water
- Bring to a boil, simmer for around 20 minutes or until the rice is cooked
- In a food processor, blend all green sahawek ingredients for around 3 minutes
- Whit the fenugreek for around 5 minutes or until white colour. Add to green sahawek mix
- Place the Yemeni rock pan on high heat, pour the salta topped with fenugreek mix
- Serve hot with bread and enjoy!
